Ingredients
2 boneless chicken breasts, cut into bite-sized pieces
4 cups diced Yukon gold potatoes
2 cups broccoli florets (fresh or frozen)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise (or plain Greek yogurt)
2 cloves garlic, minced (or 1/2 tsp garlic powder)
1 tsp olive oil
1/2 tsp salt
1/2 tsp black pepper
Instructions
Preheat oven to 375°F (190°C).
Roast diced potatoes on a baking sheet with olive oil, salt, and pepper for 20 minutes.
While potatoes roast, season chicken pieces with salt and pepper.
Lightly steam broccoli florets (2–3 minutes).
In a large mixing bowl, combine chicken, broccoli, and roasted potatoes.
Add sour cream, mayonnaise, garlic, and mix well.
Transfer the mixture to a greased 8×11 casserole dish.
Top evenly with shredded cheddar cheese.
Bake for 45–50 minutes or until cheese is golden and bubbly.
Let cool 5–10 minutes before serving.
