  • 1 lb shrimp (peeled, deveined, tail-off)

  • 2 cups shredded Monterey Jack cheese

  • 1 tbsp Cajun seasoning

  • 1 tbsp olive oil

  • 1 tbsp lime juice

  • 1 tbsp butter

  • 1 tbsp flour

  • 1 cup whole milk

  • ½ tsp chipotle powder

  • Tortilla chips (thick, scoop-style)

  • Optional toppings: cilantro, jalapeños, avocado, sour cream


Instructions

  • Marinate shrimp in Cajun seasoning, olive oil, and lime juice.

  • Sear shrimp in a hot pan for 2–3 minutes per side.

  • In a saucepan, make cheese sauce with butter, flour, milk, cheese, and chipotle.

  • Assemble nachos with chips, cheese sauce, shrimp, and toppings.

  • Bake at 375°F for 8–10 minutes or broil for 2–3 minutes until bubbly.
