  • ½ avocado, sliced

For the Balsamic Dressing:

 

  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  • Marinate the Chicken: In a bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, garlic powder, salt, and pepper. Add the chicken and marinate for at least 30 minutes.
  • Cook the Chicken: Grill, bake, or pan-sear the chicken until it reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes, then slice.
  • Prepare the Salad: In a large bowl, combine mixed greens, cherry tomatoes, feta cheese, walnuts, and avocado.
  • Make the Dressing: In a small jar, whisk or shake all the dressing ingredients together.

 

  • Assemble the Salad: Place the sliced chicken on top of the salad, drizzle with balsamic dressing, and toss lightly before serving.
